Cucumber bites with coconut and avocado topping

This simple, delicious and oh-so-light recipe makes a very satisfying snack or starter to any meal. This is because the addition of protein and fats help add some ‘weight’ to the lightness of the cucumber slices.

It’s high in fibre while low in carbs which makes it suitable for those on a Keto approach – or even a health conscious plant based diet. What’s more, these ingredients will help to keep your blood sugar stabilised and make you feel satiated too – a win, win!

Ingredients:

Serves 2

1 large avocado

3 tbls canned coconut milk

1 tbls hemp protein powder *Note: sprouted form is best for bioavailability

3 tsp finely ground spirulina powder

1/4 teas sea salt

1/4 teas crushed red pepper

15 thick cucumber slices (for a base to serve the topping)

3 tbls shredded unsweetened coconut, lightly toasted

Freshly ground black pepper

In a medium sized bowl, combine the avocado, coconut milk, spirulina powder, salt, crushed red pepper and hemp protein powder. Mash until the mixture is smooth.

Spoon the avocado mixture evenly on top of the cucumber slices. Next sprinkle the toasted coconut on top and add  a dash of fresh ground pepper for a finishing touch – enjoy!
