Green protein rich vegetable soup

 

This green protein rich vegetable soup is bursting with flavour. And it packs a punch nutrition wise as it’s rich in blood building chlorophyll, vitamin K, maganese, iron and host of B vitamins. The addition of peas adds in fibre and protein which helps to keep you satiated by stablising blood sugar levels. Enjoy as a light meal/snack (great for those trying to lose weight!) or as part of a main meal when served alongside other dishes.

 

Ingredients:

1 TBSP coconut oil
1 leek, chopped
2-3 cloves garlic, sliced/crushed
1 medium sized head of broccoli
1 large handful of kale, chopped *Cabbage greens may also be used
1 courgette, chopped
500g baby peas (fresh or frozen)
750ml vegetable stock *Use yeast free vegetable stock 
1 small handful parsley
Salt and pepper to taste

Directions:

1) Wash and prep vegetables

2) Heat coconut oil in pot and saute the leeks and garlic for approx 2 -3 mins

3) Add in the broccoli, kale and courgette and stir for a few mins

4) Add in the stock and peas and bring up to a boil, then immediately down to a simmer

5) Add in the parsley and sea salt to taste, simmer for approx 10 mins until vegetables are softly cooked

6) Once cooked, use a hand blender (conventional bender is fine too) and blend until smooth, or a bit chunky – if desired

7) Serve immediately and garnish with fresh herbs and/or fresh ground pepper to taste

Cooking time: 15 – 20 mins. Serves 6

This delicious green protein rich vegetable soup is excellent when served alongside a mixed salad and some raw seeded crackers.
